Quick and easy to make, this bold, refreshing vegan smoothie blends frozen mango and pineapple with yuzu juice and fresh mint - absolutely delicious and perfect for summer!
Measure out the quantities of fruit you need. The recipe is easy to scale, so feel free to halve, double, or triple it depending on how many servings you want.
Add all the ingredients to a blender, saving one mint sprig for garnish. If you’re scaling up the recipe, you may need to blend in batches depending on the size of your blender.
Blend the ingredients together until completely smooth.
Pour your smoothie into a glass, using a spatula to scrape down the sides of the blender so you don’t waste any.
Top the smoothie with a generous sprig of mint, then serve immediately.
Notes
Yuzu juice
Use 100% pure yuzu juice with no additives. A little goes a long way, so start with less and add more to taste as it's quite intense.
Frozen fruit
Using frozen mango and pineapple means no ice needed and gives a thicker, creamier texture. Fresh fruit works but add a handful of ice cubes to compensate.
Blending
Blend on high for at least 30 seconds for a completely smooth consistency. If your blender struggles with frozen fruit, let it sit for 5 minutes to soften slightly before blending.
Sweetness
Taste before serving. If the yuzu makes it too tart, add a teaspoon of agave syrup or maple syrup to balance.
Serving
Best served immediately while cold. If making ahead, store in the fridge for up to 24 hours and give it a good shake or stir before drinking.
