Spicy Sake Sour
A bold and refreshing vegan cocktail made with sake, lemon, agave, aquafaba, and Bird’s Eye chilli. Citrusy, spicy, and perfectly frothy—ideal for when you want something with a kick.

Ingredients

chickpea water
aquafaba taken from can of chickpeas
¼
of a Bird’s Eye chilli
depending on spice preference

Hakutsuru Superior Sake Junmai Ginjo

fresh lemon juice

agave nectar
A chilled old fashioned glass
Garnish:
Thin half-moon slice of pink grapefruit
Fresh sprig of mint
Maraschino cherry
optional, but recommended

Instructions
Cut a grapefruit into thin half-moon slices.
Pick a fresh sprig of mint.
Optional: Skewer a maraschino cherry for a sweet finishing touch.
In a cocktail shaker, combine the lemon juice, agave nectar, and chilli.
Muddle well to release the chilli's spice.
Pour in the aquafaba and sake.
If you have a cocktail strainer with a removable spring, add the spring to help emulsify the aquafaba. If not, don’t worry—it’s optional.
Shake vigorously without ice for 30 seconds to create a foamy top.
Open the shaker and check for a good head of foam.
Add ice to the shaker and shake again for another 20 seconds to chill the cocktail.
Strain into a chilled old fashioned glass filled with fresh ice.
Garnish with your grapefruit slice, mint sprig, and cherry if using.
Notes
Adjust the spice:
Start with ¼ of a Bird’s Eye chilli for a mild kick. Muddle more or add extra chilli if you prefer a spicier
spicy sake sour
.
Don’t skip the dry shake:
Shaking without ice first helps the aquafaba create a thick, silky foam.
Chill your glass:
A properly chilled old fashioned glass keeps the cocktail colder and helps the foam hold its shape.
Use fresh citrus:
Freshly squeezed lemon juice gives the cocktail a brighter, cleaner flavour than bottled juice.
Sake choice matters:
A clean, light Junmai or Junmai Ginjo sake works best. Avoid sweet or cloudy nigori sake for this cocktail.
